Ingredients
- 200 gr. all-purpose flour (1 and ⅔ cups)
- 10 gr. white sugar (1 tablespoon)
- 2 gr. salt (¼ teaspoon)
- 100 gr. unsalted butter (½ cup)
- 2 egg yolks
- 40 ml. of water (3 tablespoons)
For the filling
- 4 whole eggs
- 4 egg yolks
- 170 gr. white sugar (¾ cup)
- 50 gr. cornstarch or cornstarch (½ cup)
- 430 ml. whole milk (1 and ¾ cups)
- 190 ml. of milk cream (¾ cup)
- 170 gr. pumpkin puree (approx. ¾ cup)
- 1 gr. cinnamon (¼ teaspoon)
- 1 gr. ginger powder (¼ teaspoon)
- 1 gr. nutmeg powder (¼ teaspoon)
- Powdered mixture for chantilly (necessary amount)
- Orange food coloring (amount needed)
Instructions
- Pumpkin puree: Cut the pumpkin into cubes and bake at 200°C for 20-25 minutes, until soft. Blend until puree and set aside.
- Base of the pie: In a processor, mix the flour, sugar, salt and butter until you obtain a sandy texture. Add the egg yolks and water, and process until combined. Knead lightly and refrigerate for 1 hour.
- Spread the dough on a floured surface and cut 1 cm circles. more than the mold size. Line the mini tart molds, trim off the excess and prick the base with a fork. Refrigerate while the filling is prepared.
- Stuffed: Beat the eggs, yolks and sugar until lightened slightly. Separately, heat the milk, cream and pumpkin puree over medium heat until it boils. Pour half of this hot mixture over the eggs and stir. Return everything to the pot and cook, stirring until it thickens like custard.
- Pour the filling over each tart base and bake at 185°C for approximately one hour. Cool on a rack before unmolding.
- Prepare the chantilly cream following the instructions on the envelope, add orange coloring and decorate the cakes. Sprinkle pumpkin seeds to finish.
